Manchego Cheese, a jewel of Spanish gastronomy, has enjoyed a Denomination of Origin since 1984. Its special characteristics as well as its exquisite flavor have made it famous all over the world. This wonderful food is the result of the quality of its raw materials, the Manchego climate and the ancestral knowledge of its producers.

The NAVALOSHACES brand was founded in 1994 and is located in the heart of La Mancha in the province of Ciudad Real where we have our own pastures and herds with more than 3,000 head of cattle that produce an extraordinary raw material.

Our goal was to become a leading company in the production of Manchego Cheese. To achieve this, we have made important investments in facilities with the latest technology in the sector in automatic milking, maturing chambers, and salting control, etc., complying with all the requirements of the European Union.

A company prepared for the future that has been able to preserve and respect traditional techniques and methods led by master cheesemakers.

Quality and know-how

The result of all our efforts are cheeses of unbeatable quality. They have been awarded numerous national and international prizes and recognitions.

Our farms, Navaloshaces and El Chaparral are located in the very heart of La Mancha, in the province of Ciudad Real, where since time immemorial Manchega sheep have been raised, and with their milk, that marvel of Spanish gastronomy known as “Artisanal Manchego Cheese” has been produced.

Following the tradition, our family continues to produce the same cheeses, applying the latest technologies to the artisan know-how, thereby ensuring traceability, maintenance and treatment of the milk to obtain a unique product.

But what really makes our cheese unique is the obsession we have always had.

The Perfection of the Circle

On our lands we sustainably grow the basic cereals for feeding the herds, contributing to generate employment and wealth, while maintaining biodiversity in our territory.

We raise and select our animals, the Manchega sheep, a breed with exceptional genetic characteristics that we not only try to maintain but also to improve through a careful selection for breeding and production. These sheep monitored and certified by the DO Manchego Cheese are fed with strictly selected diets, supervised by our veterinary nutritionists based on age and condition, resulting in an exceptional product, the milk.

But our cheeses would not be exceptional without their exact point of maduration, in a controlled environment of temperature and humidity complete a perfect production process, in which each Navaloshaces cheese is distinguished by its unique qualities and nuances, its unmistakable flavor, and its seal of authenticity.

Thus, for us, circular economy is not an option, it is in our DNA. From the cultivation of our sheep feed to the production of each cheese, we control every step of the process.
