NAVALOSHACES is adhered to the Protected Designation of Origin Manchego Cheese that controls and certifies the authenticity of our cheeses.
To identify the authenticity of our Artisan Manchego Cheese we have to look at the following:
- The term Denomination of Origin Manchego Cheese appears on the commercial label of the cheese. As it is made with raw milk, the word “Artisan” also appears.
- Casein plate. With circular crown shape. On the opposite side of the commercial label, the words “D.O.P. QUESO MANCHEGO” and a series of five digits and three letters appear embedded in the rind. In our wedges, the back of the wedge shows the piece of casein disk corresponding to the portion.
- Numbered back label. It is attached to the commercial label, with the logo of the Denomination of Origin, numbered and serialized. In the case of wedges, this back label will be marked in the upper right corner by a blue or green band, respectively.
