The cured cheese ranges in color from pale ivory to dark ivory, with a firm texture and low elasticity. The rind is natural and free of artificial coloring, presenting a brownish hue. It has an intense sheep’s milk flavor, with acidic undertones and more developed, mature notes that leave a long-lasting finish on the palate and a strong, slightly spicy aftertaste.

Crafted from 100% raw milk of Manchega sheep, this cheese undergoes an aging process of approximately 6 to 8 months.
